Chocolate Protein Cookies

Chocolate Protein Cookies
Ingredients
- 225 grams of softened butter
- 1⁄2 cup caster or coconut sugar
- 1 1⁄2 teaspoon vanilla extract
- 1 large egg
- 3 cups flour
- 3⁄4 teaspoon baking powder
- 3⁄4 teaspoon salt
- 2 scoops ISO100 Gourmet Chocolate
Directions
- Preheat the oven to 180°C. Line 2 baking sheets with parchment paper.
- Beat butter and sugar in a large bowl until creamy.
- Add egg and vanilla, and beat until completely combined.
- Add flour, baking powder, salt, and 2 scoops of ISO100 Gourmet Chocolate.
- Start mixing slowly, then beat until the flour is incorporated – it will be clumpy.
- Dust the work surface with flour, and scrape the dough out of the bowl. Pat together then cut in half, then shape into 2 discs.
- Roll out to 1⁄8 sprinkling with flour under and over the dough so it doesn’t stick.
- Use festive cookie cutters to press out shapes and use a knife or spatula to transfer shapes to prepared baking sheets.
- Bake for 10 minutes, until the surface is pale golden and the edges are just beginning to turn light golden.
