Delicious Gluten Free Protein Bar Recipe

  • 50g Protein

Ingredients

  • 3 cups of raw unsalted nuts
  • 3 ounces of unsweetened chocolate chopped
  • 2 cups of cereal of your choice
  • ½ teaspoon of salt
  • 3 tablespoons of coconut oil melted and cooled
  • ¾ cup honey
  • 2 scoops ISO100 Cocoa Pebbles
  • 2 ounces of dark chocolate chopped and melted (optional)

Directions

  1. Preheat your oven to 300°F and line a quarter sheet pan with unbleached parchment paper.
  2. In a large bowl, mix together raw nuts, chopped chocolate, rice cereal, 2 scoops of ISO100, and a pinch of salt. Break up any large pieces of nuts or chocolate.
  3. Add the oil and honey to the bowl and mix well until everything is combined. The mixture needs to be thick and sticky.
  4. Transfer the mixture to the prepared pan and spread it out into an even layer. Cover it with another sheet of parchment paper and press down firmly to compress the mixture.
  5. Remove the top sheet of parchment and place the pan in the center of the preheated oven.
  6. Bake for about 20 minutes, until the mixture is lightly browned and bubbling.
  7. Remove the pan from the oven and let it cool for about 10 minutes.
  8. Without removing the bars from the baking sheet, slice them into bars using a bench scraper or butter knife. Cut down the center lengthwise, then across to make two rows of 7 bars each.
  9. Place the bars in the refrigerator for about 30 minutes, or in the freezer for about 5 minutes, until they are completely chilled.
  10. Once chilled, remove the bars from the refrigerator or freezer and separate them along the scored lines. Drizzle with optional melted dark chocolate and allow it to set. Serve or store the bars in the refrigerator or freezer.
