Porridge With Blueberry Compote
Ingredients
- 6 Tablespoons Of Porridge Oats
- 200 Grams Of Greek Yogurt
- 350g Pack of Frozen Blueberries
- 1 Scoop Of ISO100 Gourmet Vanilla
- 1 Tablespoon Honey
Directions
- Place the oats in a non-stick pan with 400ml of water. Cook them over medium heat, stirring occasionally, for about 2 minutes or until the mixture thickens.
- Once thickened, remove the pan from the heat. Stir in one-third of the yogurt until well combined with the oats.
- While the oats are cooking, in another pan, combine the blueberries with 1 tablespoon of water and honey. Gently poach the blueberries over low heat until they thaw and become tender, but still hold their shape.
- Spoon the cooked oat mixture into bowls. Top each bowl with the remaining yogurt, spreading it evenly over the oats. Then, spoon the poached blueberries and any juices over the yogurt.
